You can hide your Instagram stories from a person in five steps:

  1. Tap on your profile picture to go to your profile.
  2. Tap the icon on the top right to open your settings.
  3. First tap on "Privacy" and then on “Story."
  4. Next to "Hide story from," go to the number of people.
  5. Then select the people you want to hide your Instagram Stories from. Click "Done" to complete you’re the process.

If you want to undo the setting at any time, you can simply click on the blue checkmark. Then the person will have full access to your stories again.
